I just have to pop in with one small piece of advice, since you've already gotten some good answers from Erica and Sirena.
On the question of what to do with a vegetarian guest... I was a vegetarian for several years and often got asked the same question "but what do we need to have for you to eat?" My answer was always "don't worry about it." Most vegetarians are used to scouting out the food offerings and choosing what they want to eat. As I often tried to explain to my mom, you don't neccesarily have to have a "meat-substitute", there's always plenty of other foods on the table like veggies, pasta, potatoes, fruit, etc. If your guest is vegan (eats no meat nor animal by-product such as honey, dairy, or eggs) you may want to review the ingredients of some of the dishes, but again most are used to dealing their preferences. Like I used to tell my mom, "I've never seen a table or buffet line yet that offered nothing but meat."
